L2O Clones A Strawberry

Here is perhaps the single most exciting thing we are looking forward to in 2009: Laurent Gras of L.2O is launching cloned strawberries. Okay, not exactly cloned in the Dolly-the-sheep way — the ingenious preparation involves silicone molds cast from real strawberries, a “skin” of strawberry gel, and a filling of fresh strawberry sorbet.

The dessert is slated to hit the menu in mid-summer, and we suspect that certain chefs (coughGrantcoughMichel Richardcough) are kicking themselves over not having thought of this first.
