Here’s a secret: A preview of the menu was recently offered to friends and family “at cost,” and that cost was $30. Meanwhile, the à la carte price is $48. Not a bad markup for Kumomoto oysters and three-day pork belly in a Kyoto-esque curtained-off booth.
