La Lunetta Chef Brings Mobile Brick Oven to Brooklyn Flea

La Lunetta chef Dave Sclarow built a mobile brick oven to cater his friends Rachel Mark and Betsy Devine’s (of Salvatore Bklyn Ricotta) wedding last summer. Rather than keep such a marvelous device to himself, Sclarow will use it at the Brooklyn Flea on Sunday and at Atlantic Antic on October 5. This was a new project for Sclarow, who has built boats but never an oven. “This was all trial and error,” he says. “I knew what I wanted it to taste like.” Sclarow estimates that he spent less than $1,000 on the oven, which he built on a trailer to make it mobile. For now, he’ll make only an eight-inch Pizza Margarita for $8 that you can fold and eat while walking around the Flea. “We all have our fingers crossed,” he says. “It’s a lemonade stand pumped up on steroids.”
