Searching For The Sun-Times: Where You At?!

In this space, there’s supposed to be today’s Sun-Times dining section. Where is? Anyone with a clue, pass it along.

Meanwhile, shall we mosey over to the Tribune Wednesday Food section that we usually ignore because it’s not about restaurants? Maybe for a minute!

It’s a really huge section, with maybe a dozen articles. It’s holiday-themed, of course, but not exclusively. Actually, pretty much exclusively.

Everyone’s pimping seafood, from a Cobb Salad with lobster to white wines that would go well with such a salad. Bill Daley does the courtesy of providing a pronunciation key for such exotics as “Pouilly-Fuisse”, but 1) the Tribune web guys can’t make an ‘e’ with an acute accent (it’s -Fuissé)? and 2) if you can’t say it, you don’t deserve to drink it. Thirdly, a good tip: stop overchilling your white wine! At least try it at 55 degrees before you ruin it with ice cubes, for serious.

Let’s see, what else do we like? Get off your high horse and make a goddam pot roast. Oh BTW, did you know that brisket and pot roast are NOT synonymous? Brisket is a specific cut of beef, and pot roast is a cooking technique. The two are conflated all the time, of course, but that explains how come you can get a brisket at a barbecue place and why corned beef is made from brisket. (Well, it technically doesn’t explain that. But you know what we mean.)

Is a walnut pie healthier than a pecan pie? Our vote’s on probably.

Here’s something that will rattle your cages:


Don’t poke a cake with a toothpick or other cake tester; if it isn’t done and must return to the oven, then you’ve just given moisture a way to escape. Instead, touch the center lightly; it is done when it springs back.
