It seems that now that the ban on the United States exporting beef has been lifted, Korea restaurants have been buying short ribs like crazy, resulting in a big upward swing in prices for US consumers. What does this mean for you? Better get your short ribs before the cost makes them disappear into the ether. Here are four of the best places to do so.
•At KO Prime, the beef short ribs are available two ways: as a grilled appetizer with lemongrass, green mango and cola and as a main dish, braised with roasted carrot and sea salt.
•We keep hearing lovely things about the very new Coda and the thought of their slow-braised short ribs with parmesan grits is making us strongly consider going there right this second. Damn you, work day!
•Union Bar & Grille serves their barbecued short ribs as an appetizer with celery root slaw and amazingly sweet Vidalia onion rings.
•The Fireplace also pairs its short ribs with onion rings (these ones are dusted with fennel seeds!), but it goes the extra mile by also braising the ribs in beer and accompanying them with a mushroom bread pudding.
