In honor of the recently downsized Piattini, we present a look at one of their best dishes. It’s called Melanzane Affumicatio, and it consists of layers of deep-fried eggplant smothered in smoked mozzarella, tomato, and a truffle cream sauce. If looking at it isn’t inspiring you to call for reservations tonight, we suspect you may have a heart (or at least a stomach) of tin.
