Industry magazine Pizza Today recently wrote about the joy of adding cheesesteaks to pizzeria menus. All the bases are covered—Geno’s and Pat’s, wiz/prov/america—and variants like pizza steaks and mushroom steaks are mentioned. However, when it comes to the whole steak on pizza thing… Despite what the good people of the midwest and certain pizzerias in Bloomington, Indiana might think—Cheez Whiz does not go on steak pizzas. Just lots of meat and maybe some fried peppers and onions for the big spenders. People, the name of the game here is tradition.
