Over at the Gurgling Cod, they’re comparing gourmet cheesesteaks to regular cheesesteaks, using the deconstructed cheesesteak of New York’s Degustation as the “gourmet” and the cheesesteaks down at John’s Roast Pork as the ordinary.
While John’s version is a monument to the glories of beef, provolone cheese and hoagie rolls, Degustation’s version is a single square of olive-oil slicked pain de mie topped with a slice of rib-eye steak, roasted tomato, red pepper, herbs and a raclette-ricotta emulsion. It’s a regular Hegelian dialectic of the cheesesteaks, but we’re still waiting for the synthesis.
