Josh Ourisman recently attended a slow food event at Garden of Eden. Two pigs were prepared and the variety of dishes sounds truly amazing…and spectacularly gluttonous. Pork lard was deep fried. Pork lard. DEEP FRIED. Truly, a triumphant moment in the history of pig fat.
