People in Los Angeles lost it last year when a ten-day pop-up allowed them to savor the IRL flavor of Bob Belcher–inspired burgers. Now, New Yorkers will get the same opportunity: Alvin Cailan, purveyor of Eggslut’s world-historic breakfast sandwiches, oversaw the Bob’s Burgers shop in L.A. last December, before decamping in 2017 for a residency at Soho’s Chefs Club Counter. Since he’s already traveled cross-country for that, the logic seems to have gone, it’d be a serious waste to not have him reprise his role re-creating the recipes of Fox’s hapless chef. As a result, next week, the city will have its very own Bob’s Burgers pop-up.
In an email, Chefs Club says the takeover will run for seven days, from Monday, December 18, until the following Sunday, which is Christmas Eve. Burgers are first-come, first-served until they run out, so plan accordingly if you want to partake — the first ones roll off the grill at 11:30 a.m. One game-changing change from the L.A. version: Cailan is using legit “Burgers of the Day” from the show this time, and will cycle through a new one every day. Each costs $20 and comes with a side of fries, a commemorative key chain, and a sticker. Proceeds benefit the Los Angeles Fire Department.

Monday, December 18: Baby You Can Chive My Car Burger (beef patty, sour cream and mustard spread, chives, fried pickles)

Wednesday, December 20: Foot Feta-ish Burger / Never Been Feta (beef patty, Feta, arugula, mayo, mustard)
Thursday, December 21: Dark Side of the Shroom Burger (beef patty, shiitake, pineapple, teriyaki sauce)
Friday, December 22: Hit Me With Your Best Shallot Burger (beef patty, caramelized shallots, chèvre spread, arugula)
Saturday, December 23: We’re Here, We’re Gruyère, Get Used to It Burger (beef patty, sweet pickles, Gruyère, caramelized onions, au jus dipped bun)
Sunday, December 24: Bet It All on Black Garlic Burger (beef patty, mozzarella, spinach, black garlic spread)
