Lately, it seems like Roberta’s is popping up everywhere (which is a good thing). The latest temporary home for the pizza experts is Williamsburg’s Humboldt & Jackson, where Roberta’s will take over the kitchen from November 6 — this Friday — to November 15. While there, they’ll serve not their typical neo-Neapolitan pies but instead will dish out Detroit-style pan pizza.
This isn’t actually the first time Roberta’s has served a square slice; they’ve had a secret item, the Working Man, at their takeout annex, and this square pie will be a “revamp” of that slice. At Humboldt & Jackson, they’ll also remake a few of their classic pizzas, like the Bee Sting and Millennium Falco, in pan-pizza form, along with slice-shop staples like garlic knots and pepperoni rolls, some familiar kitchen dishes from the home base in Bushwick, and two pastas: carbonara and cacio e pepe.
