Since opening August in New Orleans in 2001, John Besh has gone on to own a total of 12 concepts in the city, making him one of the most prolific American restaurateurs. Part of what has made him so successful is that he’s chosen to separate his ego as a chef and center his restaurants around the identities of others, like Shaya — for which partner Alon Shaya recently won the James Beard Award for Best Chef: Southeast.
