For Its Final Month, Alder Will Serve a Greatest-Hits Menu

Before Wylie Dufresne closes Alder at the end of August, he’s bringing back some fan favorites: Starting tonight, Dufresne will offer an à la carte menu in the dining room that includes “Pigs in a Blanket” (Chinese sausage, Japanese mustard, and sweet chili sauce) and rye pasta with shaved pastrami. His beer-cheese burger — made with a combination of chuck, brisket, and shio kombu that’s cooked in sake and tamari — will also be on the menu, along with its accompanying French Onion Soup Rings. The tasting menu will continue throughout the end of August too, with new dishes added regularly. After all, it’s Dufresne’s style to finish strong.
