Tom Colicchio says his newest show will be “completely different” from Top Chef, and now here’s the first peek at how, exactly. It’s still him and and two judges — ‘wichcraft co-founder Jeffrey Zurofsky and BlackboardEats editor-in-chief Maggie Nemser — but for Best New Restaurant, it’s more of an ensemble thing, with 16 restaurants in New York, Austin, Miami, and L.A. competing against each other, two at a clip, “to determine who gives the best overall dining experience.” Expect undercover diners who grouse about service, and 30-minute “Pressure Tests” where hordes of diners descend en masse, all part of the idea that, as Colicchio explains, “We provide the chaos, you provide the control.”
