Modernist Cuisine’s Towering Gingerbread House Really Takes the Cake

Nathan Myhrvold’s merry band of tech-minded chefs apparently took a break from writing the definitive book on bread to create this festive gingerbread house, which is modeled after Gaudí’s Casa Batlló. It’s 100 percent edible, they say, sporting laser-cut gingerbread walls, fondant trim, Jolly Rancher stained-glass windows, and a touch of “edible gold luster dust.” In keeping with the Modernist approach, the team drew up the blueprints on a computer, used a Baking Steel in place of sheet pans to fortify the structure, and even finished the whole thing with a flurry of “tapioca maltodextrin” in place of snow. The final result is definitely a beauty to look at, but several thousand gingerbread men have no doubt just returned to their one-room, frosting-garnished cabins with unshakable inferiority complexes.
