Thomas Keller was behind the pass in crisp chef’s whites last night, but that didn’t stop him from posting a few behind-the-scenes photos of the final service for the celebrated restaurant’s kitchen. The entire operation has now shut down for an unspecified amount of time — a fine-dining kitchen based out of retrofitted shipping containers is in the cards for the new year at the French Laundry — but it will soon be back for what Keller is calling a “new beginning.” We know that will involve the implementation of an ambitious ticketing system and at least a few state-lottery winners, but otherwise, 2015 is looking to be an unprecedented year at Keller’s Laundry, which recently turned 20. Here’s a look at last night’s service.
