The chefs responsible for the menu at Balthazar (and Minetta Tavern, and Schiller’s, and the now-closed Pastis) split with restaurateur Keith McNally in April of 2013, and now Eater has confirmation they’ll land next at the Hotel Chelsea’s storied El Quijote. The Spanish restaurant, which is nearly 85 years old, changed hands earlier this year, and management at the time said the place would “retain the signature look and feel of El Quijote.” Whatever that means, it’s a pretty sure bet the shrimp in green sauce won’t still cost $16.95 by the end of 2015.
