Fine-tuning the char-to-roast ratio on the meat-grilling apparatus at Empellón al Pastor may be taking up most of Alex Stupak’s time these days, but today the chef and restaurateur took a few minutes off to announce the next installment of his “Push Project” series: Pioneering chef, TV host, and cookbook author Rick Bayless will come to town next month, and the two will cook a masa-centric meal at Empellón Cocina on Thursday, November 13. Tickets are $175, reservations can be made here, and this one will no doubt be pretty exciting.

Previous iterations of the guest-chef collaboration have brought Grant Achatz and Chris Cosentino to the city, and Stupak’s first “Push” dinner featured Mexico City’s Enrique Olvera, who’s now about to open Cosme in the Flatiron District. Masa itself, of course, is having a moment, so it’ll be interesting to see where the chefs take it next month. “I hold Rick Bayless as a personal role model,” the Empellón chef says.
