David Chang and Jimmy Fallon have been good pals for a while, so the chef’s Tonight Show appearance on Friday was all the more relaxed and funny. The pair chatted about Momofuku in D.C. and the new Lucky Peach, but the main event was a hot-wing showdown that managed to scale new heights of absurdity including habañero paste, bird chili oil, and a giant syringe filled with Scotch Bonnet puree. As an added bonus, Chang also filmed a web-exclusive video in which he talks about the time he landed a great gig at an izakaya in Tokyo but promptly cut his finger with a giant cleaver.
