Umami Restaurant Group Names Adam Fleischman’s Replacement

The restaurant group responsible for bringing Umami Burger to New York City and pretty much everywhere else it may be headed announced that Paul E. Clayton has replaced founder Adam Fleischman as CEO. Clayton is a former Burger King president and served previously as the CEO of Jamba Juice; additionally, the group says Fleischman will continue on as the company’s chairman. In addition to opening more locations of Umami Burger, the latest of which just opened in Brookfield Place, the restaurant group is basically looking to tackle several other major fast-food sectors: Its 800 Degrees project is an attempt to apply the Chipotle assembly-line model to pizza; its ChocoChicken concept is set to disrupt KFC’s tail feathers; and its forthcoming Indian-Mexican mash-up will probably take on everything else.
