Brooks Headley Has Created the Next-level Veggie Burger

We found out last week that Del Posto Brooks Headley, who’s so far served his passion project veggie burgers everywhere from the James Beard Awards to Questlove’s apartment downtown, will launch his pop-up Superiority Burger this Sunday on the Lower East Side. A truly decent veggie burger is the holy grail for many vegetarians, and writer Tejal Rao takes a look at their meat-free history while surveying Headley’s obsessive development process, which includes a risotto-like approach to overcooking and undercooking some ingredients to achieve a meaty texture. After sampling one of Headley’s creations, a Muenster-topped number on a Martin’s potato roll, Rao calls it "soft as rare, fatty beef, but with crisp, deeply caramelized edges." [T Magazine, Related]
