The almost-six-year-old upscale restaurant Rouge Tomate, which eschews heavier fats like butter in favor of vegetable-based sauces and reductions, will close in August. In a development brought on by financial reasons, the New York Times reports, its proprietors plan to reopen somewhere downtown, where they will be able to serve an expanded menu of cocktails and wine.
