The sake pairings are already being selected, and registration for René Redzepi’s Noma Japan pop-up at the Mandarin Oriental has just opened up. The chef writes that his team will “be leaving our ingredients at home and focusing our efforts over the next 6 months on finding the best produce in the region to come up with a new menu,” a development that is sure to rock the world of even the most jaded Noma-phile. The pop-up will be open inside the Tokyo hotel from January 9 through January 31, and while you probably have around two more minutes to score a dinner reservation, all those vying for lunch spots can take their time and sign up anytime during the next two weeks; guests will be chosen and assigned tables at random at the close of registration on July 7.
