Some surprising news: Dan Kluger, who cooked at Tabla and Gramercy Tavern prior to enlisting with Jean-Georges Vongerichten and opening ABC Kitchen in 2010 and ABC Cocina in 2013, will leave the restaurants on June 27 in advance of opening his own place. Vongerichten’s portfolio at ABC Carpet and Home, which is growing to include ABC Home Grown, a vegan-leaning restaurant, has been a consistent showcase for Kluger’s atypical use of seasonal produce from the Greenmarket and the most compelling case for return visits. In other words, we’re incredibly excited to see what the guy who manages to make meat-free dishes like honshimeji mushrooms on toast seem ultrameaty, not to mention stellar “guacamole” out of spring peas, does next. Current chefs de cuisine Karen Shu and Ian Coogan will take over for Kluger when he leaves, the paper reports. [NYT, Related]
