It’s official: Almost two years after he blew back into town on a late-night flight from Tokyo with little more than a pocketful of dried bonito and a killer rye-noodle recipe, Ivan Orkin is finally ready to open Ivan Ramen at 25 Clinton Street. The 60-seat restaurant, he tells the Times, will (in addition to noodle soup) serve Little Gem salad with preserved duck eggs, some kind of Coney Island dog analogue made with tofu, and side dishes like monkfish-liver dirty rice. Let’s hope the weekend of May 9 is a sunny one, so Orkin’s first customers can enjoy a cold beer or sake out in the garden, next to the big mosaic depicting an exploding bowl of ramen he told us about last month.
