Maialino Serving ‘Roman’ Ramen Through Monday

Great Caesar's ghost! From now through Monday, and 5:30 p.m. onward in its bar area only, Danny Meyer's Maialino is departing from its trattoria mission statement a smidgen by serving what it calls "Roman" ramen: The soup has a pork and chicken broth base, with farro noodles straight from the pasta machine in the back, and it's garnished with porchetta in place of chashu, a soft-boiled egg, fennel salt, shaved puntarelle, and some black pepper oil. The $10 special isn't on the menu, so you may have to ask for it by name.
