Last month, Momofuku chef and owner David Chang tweeted that Thirty Acres — which is owned and operated by former Noodle Bar chef de cuisine Kevin Pemoulie and his wife, Alex — “would get national attention” if it took its menu of things like fluke crudo and roast chicken with lobster sauce and rye berries anywhere in New York City.
