Mission Chinese Food and Mission Cantina chef Danny Bowien stopped by Late Night With Jimmy Fallon last night to demo some wings with hot sauce, and also a horchata-based cocktail. Bowien’s got a brand-new haircut, but perhaps more important, a seemingly genius chicken wing hack: To make the meat extra crispy, the wings first get fried at a lower temp, then they’re frozen before the second round.
