It was first reported in September of 2012 that Chris Cannon, Michael White’s former business partner, and chef Chris Jaeckle (Ai Fiori, Morimoto) would open a seafood-focused restaurant in Union Square. After appearing in New York’s spring and fall restaurant previews, All’onda is officially opening tonight. The restaurant’s name refers to a “soupy” style of risotto, but there’s actually only one risotto dish (with sepia, radicchio, and bottarga) on the menu. Other dishes include polenta with a miso-cured egg yolk and wild mushrooms, bucatini with smoked uni and spicy bread crumbs, and veal-glazed skate with beets and semolina dumplings. Take a look at a few of the dishes, the space, and the menu, straight ahead.
