The reboot of Tavern on the Green’s latest problems include caving chimneys, high payroll costs, and union issues — leading to yet another delay. Jim Caiola and David Salama, the Philadelphians who are overseeing the $10 million renovation of Central Park’s landmark building, have rescheduled their grand New Year’s Eve reopening for late January. One promising sign is that Caiola and Salama have started the hiring process, but to keep payroll costs down, the 250 new staffers will not be represented by a union. Yikes.
