Here, you'll find out how, exactly, Daisuke Nakazawa, who apprenticed under legendary chef Jiro Ono, landed in the West Village to take charge of the ten-seat sushi counter. He also does some shopping for live, squirmy shrimp, which are later served at the restaurant.
