It’s been a year in the making, and Gherardo Guarducci and Dimitri Pauli, the Sant Ambroeus duo who partnered with Jonathan Tisch on the renovated restaurant inside the Loews Regency hotel, have finally come up with a name and concept. The new restaurant will be a “modern American grill” called, simply, the Regency Bar & Grill. Former Standard chef Dan Silverman is recruiting kitchen staff and working on the menu for the space, part of the $100 million renovation set to debut on January 16.
In addition to being tasked with updating the hotel’s fabled 38-year-old “power breakfast” scene (including new breakfast items), Silverman is now writing a menu that’s swapping out a “modern American grill” concept in place of the originally planned Italian steakhouse focus. In the meantime, Guarducci and Pauli will also open a separate Sant Ambroeus café inside the hotel.
