Kerry Heffernan Consulting at Revamped Dylan Prime, Which Opens Next Week

When it reopens in nine days after a seven-month-long shutdown, John Mautone’s Dylan Prime will not only feature a new “reclaimed industrial design,” but also a new menu direction courtesy Kerry Heffernan (South Gate, Top Chef Masters), who’s signed on here as consulting chef. Michael Berardino, the talent in the kitchen at the recently closed Angolo Soho, will serve as executive chef. The new menu includes a buttermilk and pickle-brined roast half-chicken, pork-liver terrines, and a burger made with a brisket-and-short-rib blend served with Fontina and bacon-onion jam. The dining room has been renovated completely, and in addition to a new marble raw bar, the new Dylan Prime will serve aged Manhattans on tap and will also have a DIY martini bar. [Earlier]
