Mark Bittman has a nice piece on the late Marcella Hazan in this week’s Times Magazine. In it, he compares Hazan to another cooking legend, Julia Child. Of Italian cooking, Child once told Bittman, “I don’t get the whole thing with Italian cooking. They put some herbs on things, they put them in the oven and they take them out again.” [NYT, Earlier]
