Last December, Miami restaurateur John Kunkel told Grub Street that he and Yardbird chef Jeff McInnis were scouting NYC to open a northern outpost of that restaurant here. McInnis left the restaurant shortly thereafter, and now he’s announced plans to open Root & Bone in the East Village space that was last home to Mama’s Food Shop. Starting in January, he’ll be cooking caramelized brisket meatloaf, all kinds of fried chicken, and takes on Southern dishes like “tater tots” made with Carolina Gold rice and ricotta, which Food & Wine notes will be served with butter beans and cured egg yolk. McInnis, who appeared on season five of Top Chef, will be joined in the kitchen by Janine Booth, who makes her debut on the premiere episode of that show’s eleventh season.
