The “country boy” superstar chef, who happens to also be a resident of Waccabuc, New York, is apparently just about ready to open Jean-Georges Inn at Pound Ridge, the forthcoming Westchester restaurant Grub Street first mentioned almost two years ago. (Lois Freedman, president of Jean Georges Management, told us at the time that the 180-year-old building needed a careful and complete renovation, adding, “We don’t know how long that will take.”) The chef now has a bunch of help-wanted ads out on Culintro, the local town announcement page, and Craigslist, where a rendering gives a glimpse of what Danish architect Thomas Juul-Hansen, who did the interiors at Perry Street, has done to modernize the airy space while keeping its country feel.
