World-Famous Pizza Maker Gabriele Bonci Cooking at Paulie Gee’s

Rome’s Pizzarium is a magical by-the-slice place, marked by the infectious energy of chef-owner Gabriele Bonci and the shop’s display cases, which are packed with an ever-changing lineup of specialty pizzas loaded with new permutations of vegetable, fruit, charcuterie, and cheese toppings throughout the day. Bonci is said to have created thousands of signature pies, and is now headed to New York to stretch a little dough and bend a few minds.

He’ll be at Paulie Gee’s on October 19 to make pizzas and dough-wrapped meats for an afternoon that will also feature Italian craft beers paired by Rome-based food educator and journalist Katie Parla. Bonci will also lead a small group through a hands-on pizza workshop at Sullivan Street Bakery on October 21; Parla and Elisia Menduni will translate. More information and tickets are here.
