The famed Chicago chef will make his East Coast debut with a Mexican café opening within UPenn’s ARCH building next year, the Daily Pennsylvanian reports. Food-service operator Bon Appétit Management says the as-yet-unnamed restaurant will serve breakfast, lunch, and dinner, and will be an “entirely new concept.” Bayless says the menu will revolve around tortas, not unlike those served at his Tortas Fronteras restaurants in Chicago. He also plans to be very much in the kitchen. “I wouldn’t accept a place if I couldn’t get there regularly, and I’m very hands-on,” he tells he paper.
