Muffuletta Makes Triumphant Return to Fort Defiance Menu

Red Hook café and bar Fort Defiance has put its house muffuletta back on the menu after a two-year hiatus. Proprietor St. John Frizell explains he had to put the kibosh on the New Orleans sandwich after his bakery sent a memo, one dark day in 2011, stating it didn’t feel like making the focaccia-like bread anymore. But Frizell’s since found a suitable replacement at Carroll Gardens’ Caputo bakery, where he says the loaf was “hiding in plain sight all along.” For $12, the sandwich comes stacked with Fra Mani mortadella, coppa, and salami; slices of Emmental and provolone; and housemade olive salad.
