Shaun Hergatt left his ambitious namesake downtown restaurant a little more than a year ago, and when he did many watchers thought it signaled another blow to fine dining in New York. But tonight, Hergatt’s new restaurant Juni opens in the Hotel Chandler on 31st Street. And, from the look of things, his loyalty to high-reaching, Michelin-quality cooking is as strong as ever. Here’s what to expect: dishes like delicately arranged baby tomatoes with basil and tomato gelée, caviar-topped avocado with peekytoe crab, and veal tenderloin served with quinoa, burdock, and hon shimeji mushrooms. Four courses will run you $90, six courses go for $120, and a ten-course tasting menu clocks in at $180. More budget-minded diners, though, will be happy to know that dishes can be ordered à la carte as well ($20 for app-size plates, $40 for entrées, and $15 for dessert).
