Jason Wang tells Forbes that 85 percent of his intense and intensely popular menu at Xi'an Famous Foods is based on his grandfather's sauce recipes and a proprietary spice blend. Each is made with more than twenty ingredients, and while the mini-empire that includes six Xi'an locations and Biang! in Flushing now attracts 140,000 customers a year and has grown sufficiently big to warrant leasing a round-the-clock, 5,000-square-foot commissary kitchen in Brooklyn, those secret ingredients are still prepped every day at home by Wang's father.
