James Beard Award semifinalist and current Rao’s Caesars Palace chef Nicole Grimes has been named the executive chef at the forthcoming Rao’s in Hollywood. The Pittsburgh native, who’s not yet 30, has been working for the restaurant group for seven years. She will be joined by Rao’s New York chef Dino Gatto for the opening of the 118-year-old Harlem restaurant’s first California location, but will remain in the kitchen full-time once the red sauce is flowing apace.
