The big-box Brazilian steakhouse already has locations in Los Angeles, Chicago, Boston, and pretty much every other major city in the U.S., and now New York appears to be next: Representatives of Fogo de Chão have applied for two liquor licenses at 40 West 53rd Street, which means that midtown, already in the midst of a steakhouse revival of sorts, is about to get a lot more grilled meat. Here’s how it works: Fogo de Chão’s “gaucho chefs” stop by your table every few minutes to serve cuts of meat grilled on sticks until you can’t take it anymore. That’s it. Yes, there is chimichurri, and yes, there is an unlimited salad bar, but the latter seems to be stocked with an awfully high quotient of cured meats by the slice as well as more traditional leafy greens.
