Brooklyn Brine and Dogfish Head Taking Over Root Hill Burger Space

The short-lived Root Hill Burger in Gowanus will reopen next month as an inventive-sounding bar and restaurant project featuring exclusive Dogfish Head beer and pickled things from Brooklyn Brine, Park Slope Stoop reports. Brewery owner Sam Calagione first told Grub Street last week the project will “feature a bunch of Dogfish Head beers on tap infused with local fruits and herbs he sources from his farmer suppliers,” and now here are some more details: The collaboration between Calagione and pickler-chef Shamus Jones that began with last year’s Hop Pickle will apparently be called, simply, Pickle Shack. “We’re going to have all kinds of crazy, new, and inventive pickles, killer sandwiches,” says Jones. “We’re infusing the beer with seasonal and micro-seasonal herbs and fresh hops.” Backyard bocce is also in the works.
