The former chef at Macao Trading Co. and Williamsburg’s noveau clam shack Extra Fancy is now cooking his heart out as the “one-man band” in the shoebox kitchen at Dram. Josh Blakely, who says he considers Alex Raij at La Vara his mentor, tells Grub Street he’s written a fourteen-odd-item tapas menu at the South 4th Street bar.
