Saison, as promised, now has a full liquor license and quietly rolled out its complete cocktail program this week. And don’t forget that they now offer a more abbreviated bar and lounge tasting menu option, but that is, like the restaurant, by reservation only unless a seat happens to be available. As discussed earlier, these culinary creations came via a consultant friend of chef Joshua Skenes, with Skenes himself adding ideas about components of fire cooking in the drinks: For instance, one sherry drinkfeatures a syrup made from pineapple grilled in the hearth, and the No. 7 bourbon drink features whiskey infused with popcorn popped over hot coals.
Also, expect to find some very, very high-end glassware. Beverage manager and sommelier Mark Bright says that with the opening of the new space he had free reign to order “the best of everything,” including custom-engraved Zalto stemware for wine and champagne, and hand-crafted, finely etched cocktail glasses by Japanese vendors Kimura and Sugahara.
Cocktails are $14, and that price is subject to change.
