To promote the new Coi cookbook that is due out from fancy Brit publishers Phaidon this fall, Daniel Patterson has just made this video in which he discusses a subject often confusing to new and old fans alike: What exactly does “coi” (pronounced like “quoi”) mean, and where did the word come from?

It’s an archaic French word meaning “quiet” or “tranquil,” which he feels is fitting with the aesthetic of his food and the restaurant. He also talks about his philosophy around food, and his desire to say something new with this book.
