Jason Chan, whose list of restaurants has included Butter and Urban Union, has been in the middle of opening his latest spot, Juno, with acclaimed sushi chef B.K. Park. What wasn’t widely known is that at the same time, he’s been in the middle of a fight against Stage 4 throat cancer, dating back to early 2012 when he first discovered a lump on his neck. Though the treatment has been aggressive, Chan still found time to visit Korea studying up for his new restaurant.
