When he closed his eponymous Erwin after almost two decades last year, Erwin Drechsler hinted at a new venture focused on healthier food. Instead he’s moving in to an existing restaurant, with longterm plans to take it over. Beginning April 17, he’ll be serving dinner in Cafe Aroma, a coffeehouse in Winnetka that is currently only open for breakfast and lunch. The menu for “Erwin @ Aroma” looks like classic Erwin, focused on the regional, farmer’s market food (such as an entree built around Great Lakes whitefish) that he helped pioneer on Chicago’s dining scene in the 1990s… and including his celebrated burger.
