Fette Sau Rolling Out Barrels of Custom Brewed Beers This Week

Weeks before he opened the local branch (with Stephen Starr) of his popular Brooklyn barbecue joint, Fette Sau, on Frankford Ave., founder Joe Carroll told Grub that he was working with Dock Street, and Sly Fox to brew up some custom suds for guests to pair with their ‘cue. And then we never heard another word about the beers. Until today! A rep for Carroll told us this morning that the two past due brews will finally go on tap this Thursday. And that Carroll, Sly Fox brewmaster Brian O’Reilly, and Dock Street brewer Scott Morrison will be on hand for the first pours.

You’ll recall that O’Reilly was on tap to recreate a Swankey, which is a nearly forgotten style of low-octane beer with a notable licorice flavor that was popular in Western Pennsylvania for more than 100 years before Prohibition. We’re told that O’Reilly relied on a recipe, and tasting notes that were more than a century old to create the beer.

For his part, Dock Street’s Morrison made a traditional, Pennsylvania-style porter. With a nod to the state’s earliest German immigrants, Morrison brewed Teuton Porter, which is a hybrid of top-fermented porter, and bottom-fermented German Schwarzbier. The end result is described as a crisp, dark brown — almost black — beer with hints of chocolate and coffee.

Once tapped, both beers will go for $5 a pint, and $20 for a half-gallon from 7 to 9 p.m. And Carroll’s pit-masters will have smoked flank steak available for $18 per pound.
